Catering

Our consultant Jamie Palfrey is an established Catering Management Professional with extensive experience and understanding of the residential and palliative care sectors.

As a fully classically trained chef of some 25 years, Jamie and other members of the team are able to oversee care focused catering operations and offer solutions to ensure compliance with regulatory bodies the CQC (Regulation 14: Meeting nutritional and hydration needs), FSA and EHO (Food Safety Act 1990: On-going).

Jamie is also a fully accredited PTLLS & DTLLS trainer with particular interests in Food Safety Training and offers guidance in all matters to HACCP writing and catering premises planning.

Catering

  • Food Safety Training (OFQUAL regulated via Awarding Body)
  • Allergenic Safety Training (EU-FIC Food Information for Consumers Regulation 2014)
  • Compliance (all areas inc CQC,FSA and EHO)
  • HACCP, FSMS bespoke policy write up and implementation of all Due Diligence and critical paths
  • Supply chain auditing, contract negotiation and implementation
  • Catering Services Mobilisation and roll out
  • Recruitment and TUPE
  • Interim day to day kitchen management and guidance on catering best practices
  • Menu writing – bespoke to client unit and need
  • Dietic menus with access to SALT and specialist chef’s
  • Transitional training from superseded National Descriptors for texture modification in Adults (NDA’s) to new International IDDSI Guidelines – (from 1st April 2019)
  • Guidance and preparation for food element of PLACE inspections (Patient-Led Assessments of the Care Environment) (NHS sites only)
